As an extra sterilization step:

before soaking the kernels in water, microwave them for 1 minute or until the first kernel pops whichever is first. Let cool and then either begin soaking or microwave again if desired.

I just tried microwaving some kernels for a minute, then measured their temperature. My thermometer stops at 220F and it went all the way up. I think that should be good enough to kill any endospores or anything living in the kernels.

Any ideas?

I'm going to try making two sets of jars: one that is microwave sterilized first, and one that isn't. I'll boil them both like normal (as I don't have a PC-the reason for this experiment) and then let them sit in my incubator without innoculating them.

If the unmicrowaved jars show consistently higher contamination, I think we'll know this works.

I am sure the unmicrowaved one will contaminate. Im not sure about the other though, interesting.
