I ended up having oatmeal for breakfast today, but then during lunch I had a hard boiled egg my wife made for her salad.

Break the yolks just before flipping so they cook just a bit.

:awedisgust: :nono:

If the yolk is cooked too much then it's gross.  It's gotta be cooked to the point where it's fluffy and moist.

I just like mine to be about the viscosity of gear oil wrapped in a nice little bubble of white protection.

This...

Cooked on relatively low heat so the whites turn out nice & fluffy, with the yolk having just a layer of cooked white over it.

I love eggs, eat them almost every day. Free range, organic, & local. The eggs from caged chickens with a poor diet always seem really runny, the yolk lacks color, and they just don't seem to have much flavor...I won't fucks with them.

Fuck yeah, free range organic eggs are WAY better.

God damn I want to make some eggs and bacon right now.
So bad.

A couple pics of some of mine, from a while ago(pre laying days)

I have 12 hens, and 4 that are soon to be soup.
Ended up with 4 roosters

Weird, these pictures don't expand, wonder if my pics are glitched somehow in my gallery.

I always found that frying an egg on low heat overcooks the yolk *shrug*

I tend to cook on medium heat with that pan well heated.
That seems to be the key for me.
Enough butter/oil and then that egg flips like it is gliding on air.
Perfect.

I like it fried on high heat so the bottom gets crispy.  Gotta have the crisp.  The perfectly cooked egg has edges resembling the texture of a potato chip.  Olive oil gets super hot quick which makes it perfect for that.  I used to hate olive oil but when used to fry it's got quite the different taste.

Not a huge fan of the crispiness,  but not one to snub my nose at it either. As long as the white is not runny and the yellow is fluid I am happy.
Grape seed oil is one I also like to cook eggs in.

I like grape seed oil.

Democrats don't want me to own land where I can grow and raise my own chickens.
They want me in a highrise piled up in the city.

7 eggs scrambled.

First sautee onions (2 meduim) and garlic (1/2 bulb) in a pan with butter or oil.

Add eggs once onions are translucent.

Stir sparingly.  I like big egg clumps and not a bunch of little teeny tiny egg nuggets.  Like with stir fry, let it sit for a bit before you go mixing it all around.  Stir from the bottom with a flat spatula instrument.  Try to get under the bottom skin and lift up to make a clean scramble.  If you do it right the bottom of your pan should be clean when you're done eating eggs and not covered with a burnt, or even brown, dry layer.  I like most of my foods with mild-medium browning, sometimes medium-dark browning so I let my eggs hang out in the skillet a little longer than some people do.

Unlike Pris I season THROUGHOUT my preparation of the dish.  Onions and garlic get seasoning, as do the eggs.  If I'm cooking with peppers as well I start them first and they too get seasoned.  My eggs are never wet.

I use Adobo with pepper and Sazon if it's available.  Thyme is very useful, cumin is a must.

Serve eggs in the skillet hot and popping along with a tall stack of tortillas, flour and corn; probably around 10 tortillas total per person eating.

Should be eaten along with Valentina Extra Hot sauce.

Ice and water are nice too.

I eat this once a week usually, sometimes more often.  Very infrequently less often.
