A lot of times, I like them up and loose, fried some good bacon grease, but I generally use a low heat to avoid over cooking the bottoms. When I'm feeling healthier, I'll scramble them in a little olive oil with some garden fresh tomatoes and basil. Yesterday, I went over to the neighbor's to help him out with something, and he treated me to a fresh duck egg omelet, which was real tasty! :laugh:

I like them over easy but yesterday I was in an adventerous mood and got a mexican omlette which =3 eggs, cheese, green peppers, onions, no tomatoes, plus chili dog style chili on top, even put some mustard on it :grin:, pretty good though not something I'm inclined to eat every day, other then that I usually like tabasco sauce on my eggs, fuck coffee, eat that in the morning and I garuantee you'll wake right the fuck up :eyemouth:!

same here. i fix that dish at least twice a month.

it's so easy too. here's a quick recipe (serves 2):

split 2 english muffins and throw them in a skillet with the middle side down. toss in some butter. cut up some ham the size of a muffin (1 piece per muffin half) and as thick as you like it. toss the ham in the skillet with the muffins.

put a half-stick of butter in a small skillet and heat on low heat unil melted completely. keep an eye on it as you want to use it right as it all melts.

fill a pot (at least six inches deep) with water (leave room for the egg volume and the fact that it is going to be at a rolling boil). add some vineger as this keeps the egg whites together.

separate 3 egg yolks and toss in a blender. add a splash of lemon juice and cayenne to taste.

begin heating the ham/muffins on medium-high heat.

begin heating the water/vinegar on very high heat.

the butter should be melted so pour it into the blender and immediately blend. just 5 seconds is good. every 2 or 3 minutes blend for 5 seconds. this keeps it from separating and makes it very creamy.

push the muffin/eggs around so the butter coats the bottom of the pan and makes the muffins yummy.

the water should be at a rolling boil so carefully crack 4 eggs (one at a time) and try to dump the egg into the water from as close to the surface of the water as possible and as smoothly as possibly. with some practice you can perfectly poach the egg without the white going everywhere. you wanna boil these eggs for precisely 3 minutes at a rolling boil.

now, place the muffins split side up on a plate, layer ham on top, then a poached egg (fish them out with a slotted or holed spoon). pour on the hollandaise and prepare to receive nookie for doing such a fine job. with some practice you can have the whole deal prepared in just under 10 minutes and everything goes on the plate at once so it's all nice and hot. it's best eaten this way cuz cold eggs benedict isn't that great and hollandaise really should be eaten immediately or else you can get very sick.

they featured that on Fear Factor. looked friggin horrific. you could see beaks and wings and shit. apparently (from the reactions of the contestants) it didn't tase particularly good but wasn't real bad either. more of a mind fuck of eating a half-developed bird embryo.

When I ask for "over easy" I expect that the egg isn't cooked too long. Just flipped so that both sides and all the white gets cooked while leaving the yolk warm and runny. When you break the yolk with your fork it should run out over your plate. Perfect for dipping.

Chop up every hot pepper and some garlic, season the shit out of it then Put the eggs in a blender (no shells). While the eggs are mixing put the vegetables and some cheap ramen noodels in a pot and boil them a bit dump the eggs in and MIX, If you do this right then the noodles suck up the water and you put hot sauce on and chop em down.
