Can someone please Describe HOW, Exactly HOW the all american pressure cookers work. Say this one for instance.

hey, i just got mine recently and have only used it maybe half a dozen times.
it has a metal to metal seal - there is no rubber gasket. those black handles you see around the top are what you tighten to seal the cooker. it has a weight with 5 , 10, and 15 psi settings. besides that just like a normal cooker.

Well I just got one that's about twice the size of the one there, but it works the same. I havent used it to sterilize yet, just tested it. Put a few inches of water in it and whatever else you are sterilizing. Then there should be an arrow on the edge of the lid that matches up with a line kind of, those are to be matched up. Once you do that you tighten the black screws.
Now set it on top of your stove and put it on a medium setting. You have to watch it the whole time and dont wander off and forget about it. It may take a while to build up pressure. Once it gets to the pressure you want it (15 psi) you can start the the time, 45 minutes is good.
If you see it starting to rise above 15 psi you have to release pressure. On the opposite side of the pressure guage is a kind of screw thing where if you pull it up you can see holes in it. This is the pressure release valve. You dont have to pull it up though, you can push it down while that part is sideways. When youd release pressure you should wrap a towel in your and and just push it until it's back to the pressure you want. It may help to put the temp down a bit at this point so it doesnt go above 15 psi.
When the time is up turn off the heat and let it cool down for a few hours. If there is still pressure in there you can release it slowly until it's back down to zero. Dont open the PC until about 1 hour after it has cooled and there is no pressure. Then make sure the jars are cool before you innoculate.
I dont have a manual either but I learned pretty fast during the test run, as you will too. Just watch to make sure it isnt leaking or the pressure isnt too high.
