So i seen that other thread about kiwi's....

And I didn't read the original post, but.... Im not the only person that enjoys eating rare endangered Kiwi birds!?! I knew i was not the only one. I love them deep fried and battered. Tastiest bird out there!

This is one of mine, she is nearly plump enough to be eaten. Ill give her one more week, then she should be good.




Method.
Preheat the oven to 375°F (190°C).
Place the bird on a clean chopping board and remove any excess fat from the neck and body cavities.
Rinse the duck thoroughly, inside and out, under a cold running tap and pat dry with a paper towel.
Pierce the skin of the bird all over with a cocktail stick or a thin bladed knife, at 1 inch intervals.
Rub salt and pepper into the skin of the bird, inside as well as outside.
Position the bird on a rack placed in a roasting tray, breast side up.
Pour a few cups of boiling water over the bird and into the roasting tray and place into the preheated oven.
Roast the kiwi bird for up to 3 hours or until no fat remains and the skin is crispy and brown, turning the bird over after every 30 minutes. Basting the bird with the juices may help to release more fat whilst cooking, although this is not necessary.
Once the duck is cooked, remove it from the oven and transfer it onto a carving board. Let it rest for 15 minutes before carving and serving.

three hours? Man, that thing is gonna be dry as fuck. Aren't kiwis smaller than chickens. Try like an hour and a half max. Also things that aren't supposed to be eaten are always more delicious...
