I'm not sure whether you're using the PF tek or not. Really it doesn't matter. Just make sure that when you pick your fruits off the cakes that you get it all and don't leave any leftover stem on the cake. The bluing is normal after the first flush. If you are using the PF tek, then check out the double-ended casing tek at www.fanaticus.com . That should get your cakes white again, and on their way to a second flush.

So I should pluck the mushrooms instead of shaving then of with a knife? I was never sure.

it's easier to pluck but prolly better to cut.
just don't leave a stump to rot.
