it sounds like you either have a wack aquarium heater or a wack incubator setup

Similar thing happened to me:
I was using a cheap-ass aquarium heater submerged in water with the jars. This was to try to keep temps up around 85 instead of the 65 where I had them.

Well anyway, this heater sucked. At its lowest setting it made the water temp way to high. Must have been over 110 I'd say. Woulda fried some fish had I been using it for its intended purpose. It was a 75W one I believe.
