Rusty looking contam on pre-innoculated jars???Help!

A friend of mine happened to whip up some PF jars. He made them and didn't PC them until 3 days later. After the PC'ing was done it was left to cool overnight, the next day when he took the jars out of the PC there was rusty looking blotches all over the cakes. He's afraid to inject them with spores? Could it have been contams due to not PC cooking right away? Should I tell him to redo the jars?

Any advice would be appreciated.

Theorically, if the jars were PCed correctly you shouldn't have any problem.
But as anyone can't be sure 100%, personally, i would redo the jars.

my friend had some jars that sat for 2 days before pc'ing, and after pc'ing them he got the same rust colored contam you described above. he trashed them and started over.

I've had jars ruined with that before. Anyone??!?! what is it? i'm htinking it's nasties growing on the rice that pcing doesn't kill. gonna soak mine in water next time.

Sounds like a rust to me. It's actually a plant pathogen, it has airborne spores and will culture on sterilized grain.

I would say chances are if you P.C.'ed the jars and kept them sterile it is dead, but regardless, it can't be a good thing to have in them. I would trash them. You should P.C. your jars right after you make them, but if you absolutely must wait, put them in the fridge.

Always PC right after making jars. Bacteria will set in in no time at all.

i PCed my jars, incoced and now have 100% colinization as of 48hrs ago... i like to wait a few days before i birth to make sure they are well colonized at the bottom... i noticed one of my jars have a small dot of rust looking contams i cameonline to post and found this... my cakes are ready to go im gonna go ahead and birth it cause the mycellium is still bone white...

Wait a lil longer, a guy i know had the same problem but they just went away after incubating for another week...but the original post is before he knocked his cakes up
