Thats not strictly true. RR sterilizes his bags at 2psi for 8 hours, and due to him living at a high altitude, thats roughly 212F, boiling point at lower altitudes.

We use 15psi because its quicker, but 0psi can work.

I had a 10lb PC way back in the day. It worked fine for me, I just increased PC'ing time, like HorizonSpawn stated.

No offence taken Ozzy.

So I checked the PC the next day and the only thing that looked burnt was the tin foil and one jar was a little bit black on the outside. In all jars the rice was fully cooked (the grain "exploded") and expanded too much turning into a solid cake which I discarded.

Only 2 of them could be saved where half jar was a "solid cake" and the rest it was good rice grain.

The towel didnt burn at all so I still dont know what was the smell, maybe the tin foil, maybe that it was new and had been used ever? I will never know I guess.

So I tried again and left it on the fire, it took about 1 hour until the scape valve started jiggling. When that happened I lowered the fire so that it would only produce steam. This time I didnt smell anything bad (except some cooked rice, but a very soft smell). Most jars turned good and the grain wasnt a solid cake. I left it like 1 hour after it started jiggling, so in total were 2 hours. Probably I should have left them more time as with 11-12 PSI as you guys said the times should be longer but I needed to leave.

I hope the jars ended up sterilized as I have already incolated them.

1 hour after it started jiggling should work fine.

Are you a natural born Argentinian or do you just live there now?
