filet mignon

I only just discovered the joy of filet mignon.

WTF. I think I may have had this at restaurants a couple times, and I always wondered how the fuck you got steak to taste that great. I've been fucking around with garbage cuts, trying to get that type of flavor by virtue of marinating.

Now I know better.

Haha, nothing beats a Filet marinated and seared to perfection, med temp.
When ever i have the opportinity, i love the whole process of marinating them, and then grilling them to perfection, i even try to sear the grill marks so that it looks perfect. It almost feels like an art form :smile:

Dude, I seriously didn't even know steak could taste that good. I didn't realize such savory goodness could be found outside the realm of pork. But to compare this with pork doesn't do justice, it's something superior. :aweoverdose:

DUDE theres an off menu way of getting a fillet mignion at Mortons the steak house out here called oscar style check this shit out -

Filet mignion+chunks of lobster meat+asparagus spears+hollandaise sauce+bacon bits.

Mind you this is all stacked on top of the cut of meat its LIFE CHANGING.

essentially looks like this but with bacon sprinkled on top /homer drool

dry aging>marinading
for adding flavor to steaks of all but the toughest cuts like say london broil.
and really your introducing far too much excess liquid for some cuts.
even a quick salting an hour or so before cooking offers more
in the way of that "restaurant flavor" than marinading ever can.

Try it with a little of this next time, some grilled asparagus, and some garlic mashed pots. Start with a wilted spinach salad with half balsamic vin/half hot bacon grease, crumbled bacon, pine nuts(and/or walnuts), and feta cheese on a fresh bed of spinach. Add some craisins (cranberry raisins) too for more flavor. You could also top the steak with a really strong blue cheese, not too much.

Good kobe beef is good stuff too. That stuff'll melt in your mouth-- quite literally. You barely have to chew.

too inconsistent for my tastes, at least when purchased at a resturant,
sometimes it's slightly lean which I like, sometimes it's half fat or
loaded with gristle... I dont want to pay $14 for fat

kobe is also way overpriced, there's kobe style Wagyu (same genetic stock as
the kobe), it's treated in the same way and half the price of kobe. there's
also other cattle in which the meat is more highly prized and the price
reflects that. kobe would be on the lower end of the pricing scale

mishima beef
matsusaka beef
yonezawa beef

A country club I worked at used to grind our own meat. A few times a year we would do a 60/40 mix of filet mignon and prime rib best burgers ever.

I hated seeing all that great meat going in the grinder till I tasted the burgers  :homerdrool:

I miss getting in a quarter of a cow and helping my boss butcher it.

Haven't been fortunate enough to try Kobe/Waygu at this point. In fact the only time I saw it on a menu, the shit was running $70 for a 10 oz. cut.

Damn!

But I've had 7 or 8 prime grade steaks in my life, though. Most of them were not as good as the price would suggest, but a couple of them were drool uncontrollably worthy.

Don't know much about Japanese meat

But AMERICAN meat is bullshit. Understand that if you buy meat from ANY large supermarket chain that it comes from the same processor, more or less.

Do yourself a favor. If you're going to eat beef in the states. Buy from a local farmer/butcher shop, or buy GRASS-FED.

Even grass-fed filet mignon is heavenly, prepared correctly of course.

filet doesn't taste meaty enough.  sure, it's uber tender, but it's about as mild flavored as beef gets.  i almost always prefer a bloody strip steak or hanger steak to filet.

Had veal for the first time the other day at a small Italian joint. I know veal is kinda frowned upon because it's a calf...but yeah, still had it.

They had it covered in some white wine sauce and it was DELICIOUS.

It's not because it's calf that it's frowned upon.

If given the opportunity, I'll harvest a yearling deer before a mature one because they taste better

VEAL is calf that more than likely was unable to ever stand in its life. They're bottle fed, and kept on a rope so short that they can't move more than a couple feet.

That's why the meat's so tender

and the milkfat from the bottle feeding makes it tasty.
