My roommate used to pick up some amazing cuts of bison when I lived in Santa Fe. I think I prefer bison over beef, all things being equal.

Nice King Crimson reference.  Even in the seventies they knew the health food freaks were useless.

You overcooked it, didn't let it rest and chose a rather flavorless cut.  Try a steak with some bone around it like a rib eye, shell or porterhouse.  Filet mignon is rather tasteless which is why they often put sauce, such as Bearnaise, on it.  A good proper steak doesn't want sauce because it tastes better than any sauce there is by itself.

I cooked it perfect for my taste, and it was anything but tasteless.  However, I too, prefer a bit more fatty piece with some bone--a bone in rib-eye or T-bone is my top choice.  But it was a fine piece of beef.  The other part of it i just cooked up and finished, wasn't quite as good.

Of course, I wasn't quite as drunk either.
