Im not really sure how big buckshot is, but any verm. should be fine. You don't really need to presterlize, only after the substrate is mixed and in the jars. then you should use a pressure cooker if you can get one.

If you do want to presterilize, just put as much vermiculite as your gonna use in a baking pan and cook on 200 degrees for 15 minutes. You can also do this with rice flour, although if it cooks at all, there will be slightly less nutrient for the mycelium.

As a rule of thumb, the smaller the vermiculite particles, the more water it will hold. It is recomended that you use vermiculite that will hold more water for obvious reasons. However, any type of vermiculite will work. Also, buckshot comes in a variety of different sizes (000, 00...) so it is hard to determine what size you are referring to. I like to use the medium sized Scott's vermiculite for my substrate and the more powdery Humus Brand verm. for my casing.

get the big 1 cm big vermiculites, they hold a decent amount of water and there's more air for the myco to grow.
