Fruiting on dung without casing ?

I am using a dung straw substrate and had a question about when to fruit. Should I remove the tray from the incubation chamber and put it in the fruiting chamber when I see hyphal knots or will those occur while in the fruiting chamber. I placed 2 of my trays in the fruiting chamber once I saw the surface fully colonized. I let the other 2 stay in the incubation chamber. The 2 still in the incuabtion chamber are covered in mycelial growth and hyphal knots, It is getting to the point where I cant see any of the substrate at all due to the strong growth. I was trying to answer my own question by experimenting, and seeing when would be the appropriate time to place in the fruiting chamber but I am still confused.

How is are the ones in the incubation chamber forming hyphal knots? Is your incubation chamber transparent, in the mid 70's, and has air exchange, I don't get it?

Well maybe I just dont know what in the hell I am seeing (which is a high probability) The ones in the incubation chamber are slowly becoming a thicker white. There are little balls forming on the surface which I am guessing are hyphal knots....with all that aside what I need to know is when do you determine the appropriate time to move your uncased substrate from incubation to the fruiting chamber?

u want to move it at 100% surface colonization. start fanning and give it some light and keep humidity at 95+% and treat it as one giant cake until u case it.
