I got myself into a situation like this recently too, but my girl isn't fat; I'm just not that attracted to her.  She's hopelessly in love with me, which means I have some leeway / can call the shots on when we hang out, when we fuck, etc etc. 

Unless you've said some shit like "yeah baby you're my true sweetheart" or "I'm so glad we're dating," then she's got no reason to expect a long term relationship.  Do your own thing, break it off in your own way, and be prepared for the woman-scorned backlash.  Everybody gets rejected occasionally, she'll get over it eventually.  And hey, if she doesn't get over it, you've successfully severed a very clingy person from your life.  Win/win.

Think about your options.  Let her down now or date a fatty you have no attraction to indefinitely, and then let her down.  I suggest the former.

Years ago I had a buddy in your exact situation, except he was desperate. So he kept banging her, soon they dated, and eventually he broke up with her...

She ran into traffic. Cars honked, she wasn't hit, we dragged her upstairs (back to the apartment), they got into a huge argument and she tried to cut her wrists. Time went on.

For weeks, maybe longer, she harassed and stalked him. He changed his number and we got a couple more guys together to move (upgraded to a small rental home). Her [hot] friends (ours too) brought her over one day to "talk". She said she was sorry, she overreacted, that she was ok with just being friends. He agreed. She was devious.

Everyday after school (this was our senior year in high school) she came over and sat on our only couch. On weekends she'd slept there. When we through parties (almost all the time) she would cock block him all night, get drunk, and pick a fight with him.

If we asked her to leave her friends got pissed. In the end it took another guy fucking her to stop all this madness, and that took time. Afterwards though, they really did end up being "just friends".

Moral: Don't keep screwing her. Be a man and tell her, "Look, I had fun that night but it's not something I want to keep doing. I'd rather not screw up our friendship, that means so much more to me than sex. Ok?"

Trust me, that'll probably work out the best. She might get mad, or sad, but if you don't act weird and are nice about it all... you should be ok.
