I would say that you packed them too tightly. If you are using tappered jars, you should be able to get them out with some gentle slaps on the bottom of the jar, or gently slam them down on their lids.

Are you using cakes or quarts/half gallon jars? If cakes, Grimace is right. If quarts/half gal jars, try adding a little gypsum to the mix, 1 gram/quart or 2 gram/half gal. According to Stamets, "Gypsum is added to help keep the kernels separated after sterilization and to provide calcium and sulpher, basic elements promoting mushroom metabolism."
