Casing poo/straw question

Im new to bulk substrates and had a question, when you case a fully colonized tray of poo/straw should you immidiately introduce it to fruiting conditions? or do you treat it like you were casing crumbled cakes and wait till the mycellium colonizes the surface to induce fruiting?
