Do i really have to wait overnight?

peeps i have read in the Pf tek not to use the jars until they cool down.. "over night is best" Its best but not nessesary.. Anyone do this successfully without waiting overnight or am i just SOL and have to wait? I know that i should follow this to a T but common.. This is all about learning and experimenting right?

I've never done that, but I'm not sure if it's something you'd want to gamble with (depending on how many jars you innoculated), because if you're wrong then you'll lose all your spores.

You could just wait til the jars feel cold, you could start right away. However, if the inside is still too hot, the spores you inject will be killed. You could place the jars in the fridge or freezer to accelerate the cooling process, but those areas are full of contaminates that could get to the jars before the spores....
If you can't wait overnite to innoculate, you're going to have a hard time waiting for colonization and fruits. Learn to wait.

I get to thinking about it (just thinking I don't have any real experience). I would recomend letting the jars cool while inside the presure cooker (helps avoid any possible contamination. Once the outside of the cooker is cool to the touch (shouldn't take too long for an aluminum cooker) Carefully put the cooker in either the refirgerator or in a cold water bath (sink filed with cold water). This should help cool the jars quicker. Just make sure you wait till the cooker is cool. You don't want to bust thoes jars. The jars should be safe especially if the little shelf/divit is under the lowest row of jars.

Id say leave em in the oven.. After uv pre heated it then let it cool down. so it doesnt dry out ur jars.. Just dont forget about em or let other people use ur kitchen without them knowin about the jars in the oven.

ok i'll wait....
I think i am going to let them cool down and then just place in my rubermiad container until the next day.. Then incolt. and then put back into rubermaid..
