Any jerky is delicious... it's dried and heavily spiced meat... win.

Being from Australia, my fav is kangaroo jerky.

I used to make a fair bit of my own jerky at my previous house, oven was able to do 50-55 degrees C. Now at this unit, the lowest the oven does is 75 degrees C which is fail so I no longer eat jerky.

Can't stand Jack Links or other packaged formed MSG pumped jerky.

I've been making my own beef jerky lately ...

12 hours in a brine with bbq sauce, onion and garlic powder, cayenne, soy sauce, bbq sauce, hot sauce, and other sauces and spices to taste + brown sugar

then 3 hours in the smoker and about 12 on the dehydrator.

Absolute gold - so much tastier and cheaper than store bought!

I wouldnt doubt that it is more delicious than store bought.


God I wish I had the things to make jerky.

I always did 24+ hours for any non-acidic marinade, my standard chilli and BBQ marinades... ~12 hours for the acid ones (typically the soy/herb based with lots of citrus).

How do you smoke your jerky? I've never smoked anything in my life.

All you need is a dehydrator.  About $50 will have you all of the delicious jerky you can possibly eat.

smoking meats = easy

unfortunately you'll need to make a smoker, a smaker will allow you to
regulate the temperature, you dont want to cook it, just infuse the flavor
and dry it

I have fond memories of the tons and tons of smelt and salmon this thing produced in the hands of my grandfather when I was growing up.

Good to know - ive just started doing it, and had an overly salty first batch so i cut down the soaking time substantially. However, i've also cut the salt by a 1/4 so maybe i'd get some more flavor with a longer soak. I'll give it a try. :smile:

I use a little chief smoker with hickory chips. It's as easy as putting the meat on the racks and plugging the smoker in. Changing the hickory chips every 45 minutes for 3 hours and then throwing it in the dehydrator overnight.
