Leaving in Jar a Long Time

Hey Peeps. Quick question. Sorry if this has come up before, didn't find it while doing a search.

Here is my problem:

I'm going out of the country for most of January. Usually when I innoculate, it takes a while for the cakes to colinize, so I innoculated earlier this month with the idea of birthing right when I got back on Jan 20. I also created a new incubation chamber for my jars. This incubation chamber is working better than I expected and probably will have my jars ready a few days before new years. My question is this, does it hurt to leave the jars in the incubation chamber for 3-4 weeks after they have fully colonized the cake? I'll keep them in the dark and leave the tape over the holes to avoid inducing pinning as much as possible and birth them when I come home. Or should I go ahead a birth them, and try to find someone I trust to swing by 2 times a day to fan?

I?d put them in fridge when they are fully colonized and birth them when you come back.
