Not to worry. I had the same problem. Just leave jars in a box or something so that they will not be exposed to light. They will keep fine and probably fruit better since they will without a doubt be 100% colonized. Just make sure they don't get light or they'll pin in the jar and cause a mushy mess.

I also have this problem. Does anyone know if it is alright to leave cakes in the jars for 3 weeks after they have fully colonized?

I've left mine in the jars for over a month with no problems, long as they're not exposed to light.
