Help, I'm fighting contamination

I have one brf cake that seems to have some contamination. It seems to be cob web. It is Grey. There is a healthy growth of metabolites fighting the problem. My question is if the cake starts pinning before the metabolites win the fight what are my options? Should i cut the infected parts off or just toss the whole thing? the rest of the cake is fully colonnaded and looks great. See pic's and tell me what you think. thanks in advance for the help. and please excuse the spelling.

i say fruit them as normal. that yellowish one will probably be just fine.

I just wanted to point out that we don't fight contams. We fight to prevent them, but if it happens, it's total loss.

I colonize around 84 degrees. and prevention is always best but it seems to be improving so i just wanted to see how it goes. It is seperated of course.
