Keep reading and you'll find many differing and some confusing tec's. The shrooms will eventually teach you how to grow them. While you study these will get you by. (All answers are VERY, VERY basic and should not be substituted for actual knowledge)

1; If it's good for you, it's good for the shrooms.
2; light from the room is good enough, if you can see the cakes, it's light enough.
3; If the seal on the terrarium is tight, Perlite should be good.
4; If water drips on your cakes, you need a drip shield, if it dosen't, you don't. (my friend never usues one)

As I said, ALL of these answers can be disputed by different factors, but you'll find that out as you advance and learn. Keep reading around the site and good luck.

I have heard the method of just spraying distilled water around the edge of the jars, and just letting the shrooms grow in the jars, rather than transporting them to a terrarium. Is this valid?

Melter, I don't know, I've never heard of it. I don't like the sound of it though, it seems the shrooms would need more room.
