home made sushi

tried to make it for the first time and it was god awful. It was pretty fun and learned alot on how to improve next time around. I also got sticky rice all over the god damn place. Is anyone that is actually good at it have any tips?

Haha....I've been wanting to try to make my own sushi sometime.

Yeah, I always mess mine up too. I usually end up making them too thick, or the seaweed part ends up being too tough.

My favorite is homemade sashimi.

I tried it a while back, and I was actually surprised how easy it was. It's definately kinda tricky getting it to where the ingredients roll up just right in the middle, centered in the rice. Still haven't got that quite right. As you all know that you want to use rice vinegar to make the rice sticky right? Also let the rice cool more before you roll if the seeweed is ending up chewy. That happens from moisture getting into it.

You probably need a pretty high quality chunk of fish to eat for sashimi right?  I'm not sure I could get it fresh enough for my liking around here...

It isn't too hard I've been making it for me and my friends for a while it just takes a little practice and a very sharp knife. The knife is key.

It's all about getting a good ratio of rice vinegar with sugar, do some google searches there are many good recipes online. Roe and sesame seeds add an authentic touch as well. I'm eating all you can eat sushi today at this place called Kwandos  :drooling:

Me and a buddy used to make sushi all the time. I sucked at doing rolls, so he did that, I made the nigiri. Practice makes perfect.

Some good rice vinegar is key. You can buy stuff with the sugar and salt already mixed in, but it is pretty pricy.

Also, to prevent the rice from sticking to your hands, dip them in cold water frequently.

Great advice.  For inside our rolls a small bit of saran wrap works wonders too.

Yeah that sucks. You live in the midwest or somewhere like that, right? When I lived in Ohio we had like so-so Perch and that was about it.

Then I moved to Portland here and there is this Jap store that sells the freshest and best tasting fish I ever had. It's a whole new experience having fish this fresh! It's kind of expensive at $20 a pound but if you just pick up a 1/4th at a time that's no big deal. And saves like a 3000% mark up you get at sushi bars.

If you live in Ohio go to Columbus and check out the North Market or whatever it's called. They sell fish for sashimi/sushi there. But I never picked any up seeing as the price scared me off.

1st:  Use a rice cooker.  Let it sit ten minutes after cooking!  2 parts water : 1 parts rice.  Short grain white rice.  Rinse and drain your rice three times prior to cooking.
2nd:  For every ten parts dry rice: 1 part seasoning.  Seasoning =:1 part vinegar: 1/2 part sugar: 1/2 part mirin + a dash of kosher/sea salt.  That's my recipe anyway.
3rd:  Pour out in a glass dish (no metal) and fan that bitch.  "slice" the rice with a spatula while pouring on seasoning.  Don't over do it or else you start to mush of the rice.
4th:  Cover with a clean, wet dish towel, until you use.

To keep rice from getting everywhere, keep your hands moist with a nearby bowl of water.  Pour a little vinegar in this bowl of water to keep the pH level low.  Also, use this water to dip your knife in before you make a cut.  Cut fish with the grain for a clean cut.

So if you made 5 cups of rice, you'd use ten cups of water to cook with.  You'd use 1/2 a cup of seasoning made of 1/4 cup of rice vinegar, 1/8 cup of sugar, and an 1/8 cup of mirin (+salt).  It's way easier to do all of this converting with metric system.

:thumbup: Nice advice, that clears up exactly how much vinegar to use, I had  hard time finding that information. Sticky this as the shroomery sushi tek!

Glad you liked.  I worked at a sushi bar for close to a year so I know quite a bit. 

Also, wrap your rolling mat in plastic wrap.  Keeps rice from getting all gummed up in the slats and threads.

What Jap store do you go to? Is it the one in Beaverton called Owajimaya? That's a pretty awesome store. There's one in Seattle too.

Yep. It kicks ass doesn't it? I like to get those pre cooked octopus tentacles they eat and just eat them plain. They are so tasty.
