To prevent this, you need sterile technique and FAST colonizing isolates. They will eat the substrate before the contamination has a chance to get a foothold.

I think Sterile technique. I've worked with Cambodians and Brazilians that were way faster than other cubes I've worked with and the faster ones can still fall while the slower ones will be victorious. Especially if you start from spore solution... man, if mold spores get in your substrate during the inoculation process due to lack of procedural efficiency... the mycelium isn't going to beat the mold out entirely before the mold gets a chance at some of the nutrients.

Be clean, be sensible, if you get a contam, it's not the end of the world... chuck it, try harder next time.
