Kinda earthy, and mushroomy. If it smells sour or bad at all, it's probably contaminated.

If it seemed to colonize awfully fast, it might be cobweb mold and not mycellium if you have no experience recognizing it. If it colonized at the normal rate, just go ahead and fruit it and see what happens.

Sour can sometimes be normal, esp if there is water within the jars. This happened to me when I dunked it and drained it out again, but didnt do it that well. I got a sour smell from the yeast, but its perfectly normal and my cakes fruited great.
