pinning in jars

my friend has a jar that ounly started to colonize in 2 of the innoculatino points so the mycelium is taking longer to colonize the entire cake. on the parts where it first started to colonize it has already started to grow 3 descent sized shrooms and they are getting bigger everyday. sure they are pressed against the glass but they are still good. why isn't it standard to just let the shrooms start growing before birthing so you dont have to worry about having the right pinning conditions and you can just go straight into the fruiting?

I think it's because when you let your cakes pin early (i.e. before they've completely colonized the cakes) the mycelium network cannot take full advantage of the nutrients avaliable to it. Meaning, you won't get as many shrooms if the cakes not fully collinized as you would have if you had waited. Also, I'd immagine that the colonization would slow dramatically since the fungus is using so much of it's energy to fruit instead of to spread.

the mycelium is still aggressively colonizing its about 80% and the shrooms arent too big yet. two are an inch long and another is just starting. there are no contams yet. that is a good point though that the mushrooms may run out of room to grow and just stop and then rot before the cake is ready to birth.
