Dunking/Humidity?

Ok, as most of you know myself and my friends are all noobs at this so we need as much help as possible from you guys. Anywho here is the lowdown... 12 vermic/BRF cakes and only one contaminated jar so far. 10 days in and there are already 4 jars in the grow-tank. I never dunked them considering I dont even know what that means :-) The temp. in the tank is about 80 degrees F and the humidity apprears to be fairly high(considering all the inside walls are convered with dropletts of water.) I am using ther perlite method for humid. and it seems to be working well. Is it bad to have condensation on the walls of the tank and if so what should we do? The cakes that were put in the tank seem to be starting some type of phase which appears to be pre-pinning. I will post picutres tonight(i am getting my digital camera back.) What is the benfit to dunking? I dont think I need it but if it helps then I might just do it. Thanks.

Dunk Tek: simply dunking cakes in water for several hours to rehydrate the cake. Works wonders... do a search for "Dunk Tek" and you will find more than enough information.

With the setup you describe ,you should fruit in a few days.If you've been running 80 degrees for awhile turn in down to 72-74.Increase ventilation so you have just a faint amount of condensate on the walls.(85-92% Rh.)To high humidity and your shrooms will have the fuzzy whites upon them.Dunking add's moisture to the cake.If you need it do it.Hard to fruiters sometime benifit from cold shocking(24 hours in the fridge.)Cubes rarely need the trip.
