im making this right now, im trying to cook it slower like someone mentioned.  so far its been a half hour and they are yellow and soft.  i wasn't quite sure how small i was sopposed to make the onions tho, they are just sopposed to be like the size of a dime right, and how brown should they be like hash brown- brown?  im going for a creamy soup, and im using veg broth so i hope this turns out as good as everyone says

this soup turned out awsome, think i might add ham or mushrooms next time to send it through the roof.  them little sun shaped crackers you put on pee soup would be awsome too.  the organic vegtable broth i used turned out nice and tasty, something tells me its better than chicken broth but ill have to try the chicken also.

i used 2 heaping spoons of flour and after boiling for 10 minutes and then simmering for a few it turned out perfect creamy wise.  i ended up cooking the onions until they were really golden yellow looking, then i cranked up the heat until 25% turned a hashbrown crispy, once the broth was added it all looked white and soft so i thought i might have goofed the recipe up. so im still curious how long everyone else has been cooking the onions for this

edit: p.s. i also used a whole cluster of garlic, i just couldn't stop myself after the first clove:smilingpuppy:

i just cut them up real small, smaller than a dime, or dime size is ok.  medium heat is good because it wont burn them and it wont take forever.  i cook them until they are tan/brown and see through.

if you want it creamier, add a little more flour. or some cream. you could also blend it if you want.

I bet it would be great if the garlic was roasted before added to the soup.

The oven might be better b/c you can usually cook on a lower temp than in a toaster oven. You might be able to do it in a toaster oven.

Here's how I usually do it:

Preheat the oven to 325 degrees F (165 degrees C). Slice off the top third of the head of garlic so the tips of the cloves are exposed. Place in a small baking dish, and add just enough water to cover the bottom of the dish. Drizzle the olive oil over the top of the garlic, then cover with a lid or foil. Bake for 45 minutes.

You could then either mash the cloves or food process them and add them to the soup for a great flavor.

that sounds awesome and i will try it.  ive made roasted garlic before just to spread on bread, but i hadnt thought of that for this soup!

and my toaster oven is awesome, its basically an oven but smaller, it has bake, broil, toast, pizza toast and rotissery!  and it goes from 200-450 degrees. its a bad little oven.  and i got it for $20 at a goodwill! never used!

I'm going to try a variation on this soup in my slow cooker tomorrow.  I think I'll substitute mushroom broth & add sliced crimini mushrooms during the last hour of slow-cooking.

I cooked some lentils the other day for the first time. I do not like them by themselves at all, but mixed with some rice and veggies its actually pretty damn good.
