You can find gyspum at nurseries, hardware stores, or grocery stores that have a gardening center (like Fred Meyer's).  Ask to have it ordered in if you can't find any.

That doesn't sound like the right type of lime. ~Pixie~

You can get gypsum from most nursery supply places, its also found in plaster of paris, dry wall, some chalk sticks like they use on the black boards in schools.

I think your ok with the lime its just Agricultural lime calcium carbonate.

This is what your using right?
http://www.espoma.com/content.aspx?type=p&id=8&intCategoryID=2

Calcium carbonate will give you a long term buffer if you are using it in a casing layer because it breaks down slowly and helps maintain a proper ph.

Hydrated lime acts all at once when mixed with water and will raise your ph very fast but if your ph starts to drop later on it will not be able to maintain it like calcium carbonate.

I think it also depends on what you want to do. If you were adding it to straw pasteurization bath then i would use Hydrated Lime cause you want that instant fast effect.

We need to get RR in here to correct me if im wrong

Not quite.

Hydrated lime(calcium hydroxide) is made from limestone, heated to very high temperatures.  It's water soluble.  It will also maintain pH for the life of the casing.  Nothing we do in mycology requires a long term buffer, since the average life of a casing layer is less than two months.

If it says 'safer than hydrated lime' there's a 90% chance it's dolomite lime, which is not applicable to mycology due to the high Mg content.
