how to use curry properly in cooking?

i buy curry powder, and i add it to alot of dishes.

my problem is it doesn't seem to dissolve in water or oil.

i'm getting really tired of having the gritty texture and and uneven distribution.

how do i use curry properly?

I've gotta say, I've never had a problem with it dissolving in water nicely and I use it (or its main ingredients) most nights. :shrug:

really? i use it about twice a week for the past 2 years, and it always stays like grit no matter what i do.

actually you just gave me the idea to see if it dissolves in hot cooking wine.

if you're talking a run of the mill yellow curry powder, quality can vary greatly. i like madras curry powder (little bit spicy and has bay leaves in it). if you're trying to make a sauce i would recommend adding the curry powder to whatever you're flavoring, cook for a minute or two (to bring out oils and flavor), then adding a bit of milk, cream, or coconut milk).

i just saw a recipe for making yellow curry paste that recommends using a small amount of vinegar to dissolve the powder. also- if you want balanced flavor, add a pinch of sugar and something salty (soy or fish sauce).

I typically reserve my dry curry powder for grilled meats/fish, to use as or in a dry rub. If I am cooking a curry dish on the stovetop, I like to use the pre-mixed curry paste. It may be a slightly more expensive shortcut, but you'll never have to worry about gritty texture!

Yep, curry paste all the way.

Curry Paste + Coconut Milk = Quick Yummy Sauce.
