How do you cook rice?

I'm not asking for help with cooking rice, I'm just wondering how you people do it. I used to boil it in a pot of water and then drain it at the end but it makes really, really, shitty gluggy rice. So then I started cooking it in the microwave using the absorption method and it makes suuuch good rice (1.5 cups of water for every 1 cup of rice). How about you? Also, do you always wash rice before cooking? I do, but I'm not sure why...

I either do the stove top method almost always turning off the heat before the recommended time so none of it gets stuck to the bottom. Though I recently aquired a rice cooker, it kinda sucks but once you get used to adjusting the recommended cooking times it's all good. Never tried it in the microwave.
Here's a tip: Bust in half Chicken Broth in place of water when you make the rice. It'll be that much more packed with good flavor

yeah, for the rice-retarded, cookers can make you look like a champ.
I lived with a crazy persian girl a long time ago and she had a sweet technique that she used for rice.
she would put slices of potato at the bottom of the pot, then the rice, then the water and cook it like that.
I feel like I may be leaving a step out or have the order wrong, maybe I'll try it to be sure.
definitely potatoes on the bottom though.
it would keep the rice from burning, impart a great flavor and you'd have some nicely cooked slices of potato at the bottom of the pot that were crispilicious.

well there's this chinky type of thing that my dad taught me...
you put the rice in the pot, then to measure how much water you fill the water from the top of the rice to the 1st line of your pinky
i'm on 2cb right now so i'll tell u later i need to remind myself to go back to this thread

2:1 water:rice ratio also works well, for those of you cooking with a measuring cup or lacking pinkies.

Bring 2 parts water to every 1 part rice to a boil
Add rice.
Boil for 2 minutes
Reduce heat to the lowest possible setting and cover
cook for approximately 25 minutes.
if you let the rice sit in the pan for a few minutes after you take it off the heat the rice that did stick to the bottom generally comes off.

Put beef broth in the water, maybe 3:1 water:rice ratio, can't stand chicken broth.

Hah, fine you whiny whore
Any kind of stock or broth will do nicely. I got a buddy who just adds some soy sauce instead to boost flavour content.

Your problem is probably that you're adding the rice to the water before it boils, if not that, then you're not using the correct 2:1 water:rice ratio, or you're using skanky rice, or you've got hard water, or you're cooking it too long or not enough.
My favorite way to cook rice is to make half of the water broth of some sort, and then add a little bit of vinegar and soy sauce to the mix for flavoring.
That rice with butter, served with cold Tuna fish, is heaven. Fuck, I think I'll cook some now.

What problem? I make great rice. And 2:1 is not "the correct ratio", 1.5:1 is perfect for me.

I meant before you started using the microwave. Oh well. 2:1 IS pretty subjective, although chefs will whine up the ass about going astray from it. It also depends on how firm you want your rice, or if its going to be cooked further in another recipe.

Who the hell cares about the ratio - no offense to those who just wish to share --- but it all depends on what kind of rice you are cooking and the type of cookware used. For example, if you have a pot with a shitty lid that leaks a lot of steam then you should add extra water to compensate for the water lost in the steam. Also, different types of rice take different amounts of time. I think it's ridiculous someone would be so stringent about a ratio like that but I'm just rambling

I use all broth.. Low sodium low fat broth.
If using "minute rice" I use a 2:1 ratio but I use BOO's method of just a bit more water than rice if using unconverted rice.
The KEY to any rice is to let it steam after it boils.. DO NOT REMOVE THE LID. Just let it be and all will be fine.. If some burns, then well the burnt flavor can be a plus as it adds a nutty flavor to the rest of the pot and you just have to scrub when doing dishes a bit more.
Washing the rice before cooking is the recomended way to make "stickey rice"... Something I havnt been able to figure out...
A friend of mines mom makes this stuff all the time. They have a rice cooker in the house with stickey rice 24/7/365 and a bunch of stuff in the fridge to put over it...
Stickey rice is the stuff that forms a tight ball when you, well,,,,, ball it up. Pour cock sauce or mushroom soy on it and youve got a mouth treat, second only to that which I give to your mom.

"although chefs will whine up the ass about going astray from it.."
Yeah, they will.. Because it's just the easiest way to do it and have it turn out perfect every time.
If yer using a pot with such a shitty lid that you need to adjust your water, you arent a food afficionado, so it doesnt really matter that your rice isnt perfect.
Also, I forgot. Never stir the rice after you add it. It breaks down the grain and makes it sticky.

2 parts water to 1 part rice. add salt, butter and a good quality curry powder. The Curry powder (CP)that contains aniseed sucks in my opinion.

The secret to cooking rice is simple. Follow the directions to get the proper water to rice ratio. Once the water boils and you lower the heat and put on the lid, do not open the lid until you are ready to serve. If you take off the lid while the rice is cooking, the rice will turn sticky.

My Chef taught me a cool rule for th erice-water ratio, he says it ALWAYS works for some reason, no matter what the shape of the pot. Still, I would use a normal sauce pan, just to be safe. Just add water to the pot 2 knuckles above the rice, so if you stick your index finger in and touch the top of the rice the water will go up to the 2nd knuckle.
