Hmmmm... things sound pretty much on the up-and-up from your description. You might consider fanning 3x/day instead of two, or just installing a (filtered) air pump to provide constant fresh air.

Is water condensing on the mycelium at all? How about on the sides of the terrarium. Humidity gauges can be wildly inaccurate - my cat finds that one can gauge Rh easily just by looking at the terrarium walls.
