Brown Rice Syrup

So, the Raccoon is ambling through an Asian grocery store eyeballing the shelves looking for hot dry mustard powder, when he spots something he had never seen or heard of before:
BROWN RICE SYRUP (BRS)
He buys a bottle (for pocket change), does a web search to find out more about about this stuff.
Turns out BRS is made by culturing brown rice with enzymes to break down starches, straining off the liquid & via heat reduction cooking it down to the consistancy of syrup.
It is used as a health food type sweetener. It consists of 50% complex soluable carbohydrates, 45% maltose & about 3% glucose.
So the Raccoon trys a multispore liquid culture w/1 teaspoon of BRS to a quart of distilled water, PC'ed for 15 minutes @ 15 pounds, injects 2 cc of spores & incubates it at around 80F.
Myc grows like weeds in a fertile roadside irrigation ditch.
Next, the Raccoon trys stirring in a few table spoons of BRS to a large pot of wild bird seed (99% white & red millet) soaking over night, rinses, drains, fills jars w/internal filter disks 3/4 full of BS, rubber bands triple coffee filters over the jar lids, PC's for 90 minutes @ 15 pounds. Lets them cool in the PC for a couple hours, removes them while still warm & shakes the jars.
They shake.
With some he does a grain to grain (G to G) transfers ( w/flow hood & mask on) & with others he injects spores.
G to G colonized 100% in 7 -- 8 days, spores colonized 100% in 10 -- 12 days.
Might be a quirk , the luck of the dumb , or this stuff is a good thing for speeding things along ?
Do a web search. You can get it over the web, or usualy in any Asian type grocery store.

i belive the same thing can be acheved with light malt so if your haveing a hard time finding the brs try dry light malt *edit....found it with google and its cheaper than the malt so.........

Yup, light dry malt works Okay. BRS seems to be more forgiving, less prone to contams & does not seem to carmalize as much under higher heat ranges. Besides, it is cheaper, Asian markets are everywhere -- if you look a little. There arent that many home brew supply stores around to get malt. The Raccoon isnt into cakes. But BRS might have some applications w/cakes. SixTango
