tips for your pressure cooker

8-10 minutes without the (stopcock closed/weight on the pipe) with a good stead stream of steam is what you want. Then (close the stopcock/put on the weight) and for PF style 1/2 pints, 20-25 minutes is fine @ 15psi.

For other substrates, especially natural sources and with larger jars you want to bump the time upwards of 45 mintues - 1 hour.

With agar medias for petri dishes you want the lower time periods to prevent caramelization of the sugars/malts.

Cool. My pressure cooker only gets up to 10 psi, so I guess I'd just bump up the cook times 50%.

the pressure cooker will help alot especially with bacteria because steam alone will not kill it, it needs pressure to burst the cells therefore distroying it. Also if you are not getting growth after three weeks you might want to make sure you are using enough innoulant, I use at least 6cc PER JAR or about 20cc to 30cc per dry pound of rye.

in answer to your last question,
bacteria can definitly stall germination.
just tossed a few sour apple smelling failures last night.
the 3 that stunk showed no growth while the 5 clean ones all showed growth.
