Growbag Fruiting Problem - 1st Grow

Okay so I am using 3 growbags (from The Mad Season) and inoculated 2 with GT spores and one with B++ spores. All three bags are now fully colonized and in a rubbermaid container and have been getting 12 hours of light for over a week and then the air is fanned out of the rubbermaid and covered for the other 12 hours.
I have knotting all over the cakes and a couple of places where you can see a brown knot that looks like it has pushed through the mycelium but none of the bags are making any substantive progress. I see no pins yet and I keep thinking that I will see pins any day but I'm getting nothing. The humidity looks great in the bags and no contams - would get a picture if I could but it is hard with the humidity and the bag still closed.
I don't want to case right now - I would rather be safe and just fruit in bag (maybe case after 1st flush) but is there anything I can do to get these things pinning?? I have been growing for almost 2 months (~5 and a half weeks to colonization and then almost 1 and a half of fruiting). Any suggestions from people experienced with growbags? Thanks!

Temp has been dropped yes. Tried to follow all teks that I could find to a T. Is there anything I can do to help them along? I know that patience is key but I want to make sure I'm doing all I can

I thought that knotting meant pinning would occur soon but I've had knots for about a week. Would cold shocking help in this case?
