A lot of strains will pin in vitro, especailly fast colonizing strains.
Pinning in vitro is not really important anyway, once you see the mycelium has fully colonized the jars, if your casing, your going to cut them up anyway. They have to re-establish their mycelium network anyway.

With cakes, once you see they have 100% colonized, give them an extra 3-5 days just to be sure, so your not getting over exited, this gives them a little more time to build that mycelium network. Then when you birth the cakes, there going to get damaged and jumbled and bruised a bit anyway, they will still need to recover, get use to their new habitat, re-build there mycelium network a bit, get happy , and start fruiting.

So....I guess what I'm trying to say is, dont let invitro be your only sign that its time to birth.

Side note:

If you pull them out right after they hit 100%, they won't bruise. They haven't started producing massive quantities of psilocin just yet. It seems to me that taking them out afterwards is in many ways a waste of good psilo...
