How long before can I prepare the jars?

Would it be okay if I got my jars ready a day or two before?

You can wait longer but there is always the chance that 1. the jars are not totaly sterile giveing contams a chance to get a foot hold. and 2. you increase the chances for contams to get in to the jatrs while you wait. 3. if left too long your jars may dry out.
That being said a day or 2 shoudl not cause problems. i personaly would not leave them for longer than that though.

I (in a dream I once had) had some jars prepared and then had to go away for the weekend. No problem, just turned the pressure cooker back on (left them in there anyways), bought it up to pressure for a while and then innoculated.

(I'm using a pretty good aluminum foil seal on the jars....there were no signs of additional moisture).

if you mean pressure cook them.....yes you can wait.
I have inoculated jars that sat for 2 weeks.....and had no problems.
of course they were sealed and had alum foil over the top.

if you are talking about making up the jars and not pressure cooking them.... no you shouldn't let them sit around.
I did a test with some BRF jars that weren't sterilized.....they went bad in 2 or 3 days.

I'd say ya run the risk of having them dry out if you go more than a day.

They wont dry out in 2 days. Think about it.
