100% colonized???

If a cake has shrunken considerably while in it's jar, is it safe to assume the interrior of the cake is 100% colonized (in the shrunken areas) or should the shrinking be attributed to dehydration?

-the exterior of the substrate is completely covered with mycelia where it has shrunken, but some uncolonized areas still appear to be of normal size...

If its all white and shrunken then its 100% colonized and 100% done.

Thanks for the reply
I am guessing it will only be a few days till they are ready (since i planned on casing them), correct? unfortunately i am going away this comming weekend and will not be able to give them the proper care they need. would it be possible to let it sit in the jars till next monday when i can case or should i just forget about casing and do cakes?
