100% colonization, now what?

Hi all! I am in the process of cultivating PF. Everything has been true to form so far as I have been following the procedures in PF tek. After 2 weeks, I have had 100% colonization in my 8oz. Kerr jars. I have birthed one of the cakes soon after and placed it in a "poor mans" terrarium (sealed medium sized tupperware) I believe I birthed this one prematurely as the PF tek says to wait to see "small round yellowish fungus growth". I've read elsewhere that you can birth before this as long as you have 100% colonization. So, 1- How soon should you birth after colonization?
I have a damp cloth under a 1'' high platform. The cake sits on this platform. All of this is inside the tupperware and sealed.It sits in a warm environment with indirect light.There is condensation, and it feels quite humid inside. I remove the lid and fan this container 3x daily. Problem: It's been 2 weeks since I birthed and I have had no progress in growth. It seems to have stalled.( I also wonder how anything can "break thru" this mycellium that apperars to be like stucco.)2- Why hasn't the fruiting cycle fired and what can trigger it? I have no signs of contam. just no further growth. I birthed another jar a week after the first one because I noticed what i thought was to be those "small round yellowish fungus growths" against the bottom of the jar. This cake is in the same type of set up as the first one, but it is too early to tell what this one will do as I have just birthed this one recently.I have others I have not birthed yet. Someone please help, and let me know if I'm on the right track.

Cakes can be real finicky sometimes. Things like moisture content and type of vermiculite can make a real difference. Be patient. If you want my advice, case. In many ways it's easier. Not to mention the fact that you WILL produce more/bigger fruits. But hey it's all up to you, for a first time caser I'd recomend the hongus tek. Which is basically just a straight verm casing.
