HEY!!!!! Okay, I might be able to help your color situation without purchasing you a new camera techno-shaman. Yes, contrast can be a very big problem with cheaper cameras. I did some amateur photo work a few years ago, and a 'pro' gave me some advice on solving this.
In your case, mostly everything you are trying to photograph is white or close to it (very light). So the camera tries to adjust for a non-existant problem and you get the funky contrast. You can fix this by getting some DARK (like very black) objects in your picture. Try getting a flat black styrofoam board to place behind everything as a background, or just get something black into the photo area. That way the camera has the true dark color to compare to and won't make those bad adjustments.
