HM, what makes you think that?
I can think of one obvious reason for cake over drying - maybe the temperature is to high. I wouldnt suggest injecting water into the cakes. Its a big risk. Try to lower the temperature.

i have to agree with tweedy. i started with four 1 pint jars they too were dryin out. so i got a un oppened syringe and put some boiled water into contam on all execpt one the one i didnt inject.

I was just searching through the bulletin board and now I know what the problem is:

I inoculated the jars too early.

I waited for about 2-3 hours!

WAY TOO EARLY!!

Well...lesson is learned! =)
