I don't really know, but I think that the fridge will initiate pinning before the mycelium can colonize the casing, so I'm not particulary sure...
anyone?

If you put them in the fridge they should be fine for 3 weeks. If you were going to strore your jars longer like a month or more, I would suggest the freezer. You can keep colonized jars in the freezer for years and the mycelium will remain dormant until temps are in favor for fruiting. The same in the wild. Cubensis will slow or stop producing in the winter depending on your region. The mycelium will remain colonized in the cow dung until spring when they fruit again.

I;m not sure about cold shocking. I have never cold shocked before and all I ever grew was Equadors. They fruited awesome without cold shocking. Dunno, its up to you.
