Selling gourmet / edibles to local restaraunts, farmer markets

Well, is this plausible? Whats the easiest species to start with? And which species offer the most exotic health benefits?

Yes, it is plausible though markets for mushrooms vary from region to region. The best way to find out what restraunts in your area are using is to go around to a few and ask them.

The Oyster mushrooms, Pleurotus species are the easiest edible to grow.

The most "exotic" health benefits is a tough call, though it seems to me that the one that is getting talked about the most is Grifola frondosa aka Hen of the Woods. Hen of the Woods is also an excellent edible.

yup, the oysters and shiitake are the esiest to sell to the resturants. i know a couple friends that i sell Blue oysters and portbello to. I've known them since they were culinary students while i was an art student in my local community college. they are doing well, and i can always count on them to buy my good yields (that i dont keep for my self) for an honest price. (which varies with the m arket.) one friend uses them for his french foods (oysters), and the other uses them for all of his italian dishes (portbello/crimini).

i think that the trick is to take some fresh samples to potential customers, and actually have the means to supply ALOT of them.

The money is in wild edibles. But you can make a good dollar, on the normal cultivars.
