latest mead recipe

so...2 days ago i decided to make a new batch...the first one was water, honey and yeast...

the second one i decided to make something slightly different...
ginger, lemon, honey, water...the proportion was approx: all first ingredients as 1/3 and 2/3 of water.

it has been going well...

and...by the way...anybody would know how long would a batch like that take to be drinkable?

Depends on starting gravity, ending gravity, yeast strain used, fermentation temperature, sanitation, and the level of appreciation of alcohol.

Hard to say as I've never done one with lemon. My guess is it would be drinkable in 2-3 months. But as always with mead it will benefit from additional aging.

Adding fruit will speed up the time the mead is ready as opposed to just honey/water meads. Seems yeast has a hard time converting the sugar in honey to alcohol as opposed to other sugars. As a comparison I have an orange/spiced mead that I started two weeks ago which is supposed to be drinkable after two months.
