Best species to start out with?

What do you think is the best gourmet species to start out with, in terms of being easy to grow? I'm a beginner, and I have no access to compost, manure, or straw, but wood chips and sawdust are easy to come by...

I notice that one of the vendors lists oyster mushrooms as easy to grow, so I'm tempted to do that. I also LOVE shiitakes, and they're listed as "moderately" easy to grow. It's such a treat when I can get them fresh, rather than dried. But since they grow mostly on wood, I thought they might be a good bet. Should I leave the shiitakes for later, once I'm a little more experienced?

Also, do the different "colours" of oyster mushrooms (golden, blue, pink, etc.) taste any different?

Hello Alpis, start from cloning the mushrooms from your local store through petris or, in the case of Oyster (Pleurotus ostreatus), also on cardboard.

Thanks, I didn't know there was an advanced search engine... I'd just been using the one at the top right hand corner of every page, and most of the results returned were Psilocybe related of course.

And thanks for the book advice. I have Stamets' Mushroom Cultivator out from the library, but when I take it back, I'll see if they have that one too.

The yellow and pink oyster taste a little bitter to me, though if you cook the yellow till it's just starting to get a little crispy it is excellent.

All of the oysters are good beginner mushrooms, the pink is IMO the easiest of the oysters.

i would have to say lions mane is a pretty easy grow.

one thing thow nomatter what you choice make sure you make lots of spawn or you will get little bitty things you would put on toothpicks for samples.

lionsmane can grow on wbs althow that prob isn't the best substrate but it does work.

That's what grew when I tried it, I think though the problem was my filter was too large on by block, too much air and you get a lot of little fruits.

A lot of it is specific to the substrain you isolate. Hericium can grow huge. I've harvested three to five pound individual fruits before from the wild. Clone one of those, and you can grow nice ones on supplemented substrate blocks.

Nice, I've found them that large, but never in good condition, they had started yellowing.

Surprisingly enough, the largest hericium I've ever picked from the wild was in late December when there was already 3 feet of snow on the ground. Mrs Rabbit and I were out snowshoeing and found it 20 to 30 feet up an old Alder tree. I climbed up and knocked it off while she waited at the bottom to catch it. The thing was in perfect condition. I should go back this month and check it. They tend to grow back year after year from the same tree.
