That says it all. I am trying to grow some rare edibles for some local high class restaurants around the area. Any ideas, also how much money am i lookin at?

truffles are the most money i think, probably followed by morels

Hey vintage_gonzo,
You will probably have to ask around at the resturaunts in your area and see what they are looking for. The prices that you can get for your mushrooms will vary from one area to the next.
These are the most common edibles that resturaunts use that are cultivated.
Maitake, Grifola frondosa Shiitake, Lentius edodes The oyster mushooms. Pluerotus species and closely related species like Hypsizygus. Agaricus species, like Portabellas

Oysters I think the easiest to grow and sell! ...at least in my area...

best bet is definetly shitake... most people know this and it still is getting a fair price for them... oysters are easier yes but you will sell much less.. shitake is by far the way to go, im just not that interested...

Resturants want them all. If you wanna grow for the food service you need to have a selection.
With a selection of enotake, erygii, shiitake # 1's and 2's, portablella, maitake, and so on you could rock the place out.
People get bored of the same old ... you got to have a selection for making money.

I would be curious to hear if anyone here is doing this and making any decent money at it. If so, what kind of time and money commitment would be anticipated? Also, how many "fine restaurants", whole food stores, etc. would be necessary in a given geographic region to support an endeavor like this? I would love to hear more about the market feasibility of this for a small business.

Do market research in your own area. If i had the time and space i could make 2000$ a week. Two deliveries a week. But thats because i am in with the Greeks and they love food and restaurants. Not to mention the 8 million people here with hungry bellies. That would be at the full time level.

like said ^^^, do your own market research. find a niche in the market and fill it. if restraunts are looking for fresh shiitakes, grow fresh shiitakes. you will have competition so you have to play your cards right

The best cards is variety, not anyone will be wurth it alone. People don't want just one type, they need multiple ones to work with.

Also, if your really wanting to make money, diversify. Make some sauces with them, or other ready made products. Talk to all the local farmers markets and co-ops. And, like already mentioned, start at the END of the equation...Who wants What?

Can you really just independently grow something like this and sell it to restaurants without any sort of certification or tax ID?

Well, done a bit of research as well, and found that if you can offer a FRESHER product, delivered FASTER, and a little CHEAPER, most restaurants will at least give yeah a try...
Its all about them getting a better produce... And you giving it to them.
