Pressure Cooking and air exchange

So a foaf just got an old national pressure cooker that has no inside tray on it. I guess that's alright to use still. He was thinking about putting a cloth on the bottom so that the jars don't touch the metal. The guy keeps asking me how much water to use in the pressure cooker.

As well, he was wondering where one normally gets microspore tape and if it is a good practice to cover the holes in the jars with the tape and then cover with foil before PCing.

You must use tape which is resistant to temperatures of 121C during pressure cooking, in which case you want to be using electrical tape.


You can afterwards replace it, when you like, with micropore tape - you can get it from a pharmacies, chemists and probably supermarkets nowadays too. It is commonly sold as surgical tape.

Certainly, use a folded cloth at the bottom. Use about 2 inches of water.

My micropore tape withstands 1 hour @ 15PSI easily. Your mileage may vary.
