Can someone educate me on preparing oyster mushrooms? Please?

Hi everyone! This is my first post in this forum as somehow I didn't realize it was here!! Anyway I have a lot of oyster mushrooms growing right now, and I'd like to really enjoy some of the mushrooms that I don't sell.
 When I saute the mushrooms I get a slimey texture that I really don't enjoy. The mushrooms are nice quality when I start, so I don't know what I'm doing wrong. I slice the caps from the stems, and place into a saute pan heated to med high heat for about 5--7 minutes with butter, white wine, some lemon juice, and keep the mushrooms moving in the pan every so often.. So if you could educate me I'd greatly appreciate it. Also I'm a vegetarian, so that may help you if you're kind enough to donate some recipes. Here's a few more pics to enjoy...

Thats where your going wrong!
Don't poach the damn things, they contain enough water as it is!!!
Fry the fuck out of them on high heat with oil, fresh garlic, chili, ginger and a splash of fresh lemon/lime at the end

A very simple way to prepare them:
Take an egg and add black pepper and a dash (just a dash) of salt. Drag your caps through the egg/spice on both sides, then drag them through neutral (but tasty) biscuit crumbs. Then fry, which is best in cowbutter but olive oil works fine too.
Don't use too much salt, as the salt will synergize with the glutamates in the mushroom, which also make the flavor of the biscuit crumbs important.

I was thinking fried too but tempura style.
Just pick up a box at the market with some squash and brocoli and fry away. Make a few dipping sauces too.
Oooh and you do want a higher heat to saute mushrooms..
Whats the turn around for oysters? Is it hard to have a biweekly supply for sale? Ive wanted to get a booth at local farmers markets and sell vegetables and mushrooms.

Thank you all very much. I will try to prepare the mushrooms as you say, they sound good! The turn around id about 21 days on blues. I have a pink that I'm going to grow again, it fruits in 9 or 10 days. You can have biweekly supply, but it take a little work every day. If you can make mushroom growing bags twice a week, you'll hav a constant supply. Let me know if you want cluture plates.
