Shrimp Stuffed Mushrooms

Made these for mother's day, good stuff.

Shrimp Stuffed Mushrooms:

1.) 6 Tbs. butter.
2.) 2/3 cups milk.
3.) 1/4 cups parmasean cheese.
4.) 1/3 cup grated cheddar.
5.) 1 tsp. minced garlic.
6.) 1/3 cup finely chopped onion.
7.) 1/2 cup finely chopped shrimp (or your choice shellfish).
8.) 4 large potatoes
9.) 7x10 inch [or reasonably close] casserole dish.
10.) enough mushroom caps to layer in the casserole dish

Preheat oven to 350 f.

Chop potatoes, boil and drain.

Mash and beat potatoes with 3 Tbs. butter and 1/3 cups milk. spread to cover the bottom of the casserole dish.

Layer mushrooms caps [gils facing up] to cover and set aside.

in a small sauce pan combine shrimp, 3 Tbs. butter, 1/3 cups milk,parmasean cheese , garlic and onion. simmer, stirring frequently untill reduced to half volume. let cool.

once sauce is cool, spoon into mushroom caps, sprinkle cheddar and bake for 35-45 min.

I recommend shittake mushrooms.

I should think that the 'magic' would be all gone and a waste if that was done, after all it is going into 350?F for quite a good amount of time    :blush:. 

Unless you're suggesting.....

hmmm...most of the ingredients are pre-cooked when you load the caps,
all you really need to bake is long enough to melt the cheese.
i'm pretty confident much of the majick would remain after 30 minutes,
esp. if the temp were lowered to say 250*

Hippie: the baking time is to evaporate out more of the water content so the spuds are thicker. i also prefer shiitake to be well cooked.

Shrimp and mushrooms, two of my favorite foods
but 2 i haven't mixed yet. I will definatly try this
