Exactly HOW cracker dry does your fruits need to be in order to be considered dry?
I have had some fruits that I have dried to the point that they are dry, but still a little flimsy, then I put them in a zip lock bag. Will that little tiny bit of moisture effect the potency?

So dry that when you bend a stem it cracks in half. If you put moderately dry mushrooms in a bag and keep them, you will end up with some mushy, slimy mushrooms. Just put a fan blowing over them for about a day and a half to two. That will give you some nice 'cracker' dry mushies.

They weren't wet enough to be slimey, but weren't wet enough to break when bent.

How dry is dry? How wet is wet? If you piss your pants, do they not feel more wet than if you just fell into a lake?
Seriously though, moisture will not affect the potency as much as it will allow the shrooms to rot. You'll know if that happens because they look really nasty. I lay a fan on its back with a wire mesh on top. I lay the shrooms on the screen and dry for 2 - 3 days, depending on the size of the shrooms. When they feel like they couldn't get much drier, I put them in an airtight container with a layer of reusable silica gel flower drying crystals which I get from a craft shop. Use a screen of some type to prevent them from touching the crystals. You cannot leave them in too long. I store mine in the container and take them out as needed. I put them in a open baggie so the crystals do not contact the shrooms. The drier they are... the longer they stay good.

"How cracker dry?" is like "How dead is dead?"
Cracker dry is pretty self explanatory. Devoid of moisture.
Any moisture left in the fruits can result in decay.
Dry matter can't decay, at least not in an average human lifetime.

The psilocin inside will break down if not stored correctly though

If you plan on storing them you have to make sure they are cracker dry. When you bend them, they should crack. If not, they will rot during storage. That is never pleasant.Ifyou plan on eating them soon and not storing them, then it is not a problem.
